Regional products

I don't really see elves domesticating animals in this world. Seems
like it would be a little like chopping down a live tree by breaking
an animal's spirit.

I could see halflings training ponies.

Something else I think you forgot is the draft horse. Draft horses in
my opinion would be very important to merchants and would be bred by
the people who breed heavy war horses.
